Professor Wagner Romão, from the Institute of Philosophy and Human Sciences of Unicamp (Universidade Estadual de Campinas), explains that until the end of the 19th century it was an everyday food. "The São Paulo menu is diversifying, and restaurants adopt a weekly schedule of prepared dishes. It is not known for sure why the change came on Monday, but the old ones say that it was about reusing Sunday meals."
