Frescal is not synonymous with fresh. Biologist Luciane Oimari analyzed 210 samples of this cheese in Campinas and found that 70 were outside one or more microbiological standards, unfit for consumption. Minas frescol only loses in sales to dish and mozzarella cheeses. page 2
